I’ve been making different variations of stuffed peppers since before I got married. Does anyone else refer to their cooking life this way? Pre- and Post-marriage? I know I can’t be the only one who had a mere 6 recipes on rotation and ate a lot of cereal and sandwiches in my single days!
Stuffed peppers made it on that exclusive, coveted pre-marriage rotation because they are simple, easy, delicious and you can even freeze the stuffing for later!
I’m giving you my go-to recipe for stuffed peppers, but I’ve done them so many different ways depending on what we have on hand. These are a great pantry meal too where you can usually whip up the stuffing with things you already have on hand. I usually use bell peppers but you can stuff any kind of pepper you’re crushing on.
Get creative: add corn, other veggies, change up the meat, top it with guacamole! My mouth literally started watering when I typed the word “guacamole.”
Please let me know your mouth-watering variations of this simple recipe in the comments!
