When I was a child, my sweet Dutch neighbor was like our replacement grandmother, because neither of mine lived nearby. She had a few cats, hard candies in a little dish by the door, her house smelled like perfume and there were doilies everywhere. We absolutely adored her! She was so sweet and we thought her house was the coolest (especially the candy).
She made this delicious crumbly Almond Torte that was the perfect texture, not too sweet, and topped with sliced almonds and a little sugar. Even though it is more of a sophisticated dessert, we LOVED it, even as kids. Someday soon, I’ll share that original recipe, but I want to share the refined sugar free version I have been working on. This is perfect paired with coffee- morning or evening- I won’t judge!
It took some time to get the ratios right, but I sweetened this version of the Almond Torte with honey instead of sugar, making it a refined sugar free dessert recipe that actually tastes delicious. I find the texture to be a little different, still moist and cake, but not as crumbly as the original. I am working on some other sugar free dessert recipes as well, so stay tuned.
